Chickpea Date Sweet Potato Tagine
Dates add sweetness, chickpeas add earthiness, and sweet potatoes add heartiness. All of these ingredients are simmered together in a tasty mix of spices to make this vegan tagine. It is a healthy and comforting dish that is great for cold nights.
Ingredients:
- 2 cups cooked chickpeas
- 2 medium sweet potatoes, diced
- 1 cup pitted dates, halved
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can 14 oz diced tomatoes
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the chopped onion and cook it until it turns clear
After you add the ginger and garlic, cook for one more minute
Add the spices cinnamon, turmeric, cayenne pepper, coriander, and stir them in
Cook for one to two minutes, until the food smells good
Cut up the sweet potatoes, chickpeas, dates, tomatoes, and vegetable broth
Add pepper and salt
Turn down the heat and let the mixture simmer for 25 to 30 minutes, or until the sweet potatoes are soft
If necessary, change the seasoning
Serve hot with fresh cilantro on top
