The Gouda Life: Oh, the Dramatics Spicy Chickpea Salad Melts
Enjoy the fiery flavor of these spicy chickpea salad melts, which are made even better with gouda cheese. These sandwiches are great for lunch or a light dinner because they are full of flavor and texture.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon Sriracha sauce
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 4 slices gouda cheese
- 8 slices bread of your choice
- Butter for spreading
Instructions:
With a fork, mash the chickpeas in a bowl until they are slightly chunky
Put in the Sriracha sauce, red onion, celery, red bell pepper, mayonnaise, and cilantro
Combine well by mixing
Add pepper and salt to taste
Each piece of bread should have butter on one side
Spread the chickpea salad mixture out evenly on the side of 4 slices of bread that hasn't been buttered
Put a slice of gouda cheese on top of each slice
Put the last few slices of bread on top, with the buttered side facing outward
Set a skillet that doesn't stick on medium heat
It will take about 34 minutes per side to cook the sandwiches until they are golden brown and the cheese melts
