Low Carb Cauliflower Crusted Grilled Cheese



Enjoy all the comforting flavors of a traditional grilled cheese sandwich without the carbs! This low carb cauliflower crusted grilled cheese is crispy on the outside, cheesy on the inside, and perfect for anyone following a keto or low carb diet.

Ingredients:

  • 2 cups cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Butter or olive oil for grilling
  • 1/2 cup shredded cheddar cheese for filling

Instructions:

Start by heating the oven to 400F 200C

Put cauliflower rice in a bowl that can go in the microwave

Heat it for 5 minutes, or until it gets soft

Allow it to cool a bit

Squeeze the cauliflower rice to get rid of any extra water using a clean kitchen towel or cheesecloth

Shredded mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper should all be mixed together in a bowl

Mix well

Put parchment paper on the bottom of a baking sheet

The cauliflower mixture should be spread out on the parchment paper and shaped into two squares that are about 1/4 inch thick

The crust should be set and the edges should be golden brown after 20 to 25 minutes in a hot oven

After baking, let the cauliflower crusts cool down a bit

Then, carefully turn one of the crusts over and top it with cheddar cheese shreds

To make a sandwich, put the other crust on top

Melt the butter or olive oil in a pan over medium heat

Carefully place the sandwich on the skillet with the cauliflower crust

The sandwich should be grilled for two to three minutes on each side, or until the crust is golden and the cheese melts

After taking it out of the pan, let it cool for a minute

Then cut it up and serve it hot
