Crunchy Catfish Tacos with Chipotle Mayonnaise and Apple Slaw
Ingredients:
- 4 catfish fillets
- 1 cup buttermilk
- 1 cup cornmeal
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mayonnaise
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 2 cups green cabbage, thinly sliced
- 1 cup apple, julienned
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 8 small flour tortillas
- Vegetable oil for frying
- Lime wedges for garnish
Instructions:
In a bowl, combine the buttermilk and Cajun seasoning
Add the catfish fillets and marinate for 30 minutes
In a separate bowl, mix the cornmeal, salt, and black pepper
Dredge the marinated catfish fillets in the cornmeal mixture, ensuring they are well coated
Heat vegetable oil in a skillet over medium-high heat
Fry the catfish fillets until golden brown and crispy, about 4 minutes per side
Drain on paper towels
In a small bowl, prepare the chipotle mayonnaise by mixing together the mayonnaise and minced chipotle peppers in adobo sauce
Adjust the spiciness to your liking
In a large bowl, combine the green cabbage, julienned apple, red onion, and chopped cilantro
Toss to create the apple slaw
Warm the flour tortillas in a dry skillet or microwave until pliable
To assemble the tacos, spread a generous amount of chipotle mayonnaise on each tortilla
Place a crispy catfish fillet on top, followed by a scoop of apple slaw
Garnish with lime wedges and additional cilantro if desired
