Black Bean Burritos
These vegan black bean burritos are full of flavor and good for you, so you can eat them for any reason. They're quick and easy to make, so they're great for a hearty lunch or a busy weeknight. Add your favorite toppings to make it your own and make a tasty and filling meal!
Ingredients:
- 1 can black beans, drained and rinsed
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/4 cup vegan sour cream
- 1/4 cup salsa
Instructions:
In a skillet, saut onion, bell pepper, and garlic until softened
Add black beans, cumin, chili powder, salt, and pepper
Cook for 5 minutes
Warm the tortillas in a separate skillet or microwave
Layer each tortilla with rice, black bean mixture, lettuce, tomatoes, avocado, cilantro, vegan sour cream, and salsa
Fold the sides of the tortillas over the filling and roll tightly to form burritos
Serve immediately, or wrap in foil and store in the fridge for later
