Roasted Tomato Ricotta Crostini



A tasty snack or appetizer made of thin slices of baguette topped with creamy ricotta cheese, sweet roasted cherry tomatoes, and a drizzle of balsamic glaze.

Ingredients:

  • 1 baguette, sliced
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • Balsamic glaze, for drizzling

Instructions:

Get the oven ready by heating it up to 400F 200C

Put slices of baguette on a baking sheet and toast them in the oven for 5 to 7 minutes

Add olive oil, salt, and pepper to a bowl and toss cherry tomatoes with them

Place the tomatoes on a baking sheet in a single layer

Roast them for 15 to 20 minutes, or until they begin to turn brown

In a different bowl, mix the ricotta cheese with the basil and garlic that you have minced

Put some of the ricotta mixture on top of each toasted baguette slice

Put roasted tomatoes on top of each crostini

Add the balsamic glaze right before serving

Serve and have fun!
