Red Velvet Valentine's Cupcakes
Ingredients:
- 1 and 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/2 cup buttermilk
- 1/2 teaspoon white vinegar
- 1/2 teaspoon baking powder
- Cream cheese frosting store-bought or homemade
- Valentine's Day-themed sprinkles optional
Instructions:
Warm your oven up to 350 ?F 175?C and put paper liners in a cupcake tin
Put the cocoa powder, salt, baking soda, and flour in a bowl and mix them together using a sieve
Put away
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
One egg at a time, making sure to mix well after each addition
The red food coloring and vanilla extract should be mixed in well
Put the buttermilk and white vinegar in a small bowl and mix them together
Some of it will curdle, which is normal
Add half of the dry ingredients to the butter mixture and mix just until everything is mixed together
Next, add half of the buttermilk mix and mix it in again
Do it again with the rest of the wet and dry ingredients
In a different small bowl, mix the baking powder with a teaspoon of water
Then, add the dry ingredients to the wet ones and mix them together
Fill each cupcake liner about two thirds of the way to the top with batter
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
First, let the cupcakes cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
Spread cream cheese frosting on the cupcakes once they are completely cool, and if you want, decorate them with Valentine's Day-themed sprinkles
